A Simple Summer Salad
3 cups chicken stock
1 cup wild rice
1 tablespoon of lemon juice
1 tablespoon of lime juice
2 teaspoons extra virgin olive oil
3 kiwi fruit, peeled and diced
1 cup seedless red or green grapes, halved
1/2 cup of chopped walnuts
Fruit-Filled Cornucopia Burritos
(Breakfast, dessert, snack. You name it, they are delicious anytime.)
1/2 cup peanut or almond butter
12 (6 to 7-inch) flour tortillas
8 oz minced pineapple, juice drained
2 medium bananas, thinly sliced
2 large kiwi fruit, peeled and chopped (approximately 1 cup)
6 to 8 strawberries, hulled and chopped (approximately 1 cup)
1-1 1/2 cups flaked coconut
Preparation
Spread 2 teaspoons peanut or almond butter on each tortilla. Top each tortilla with 1 heaping tablespoon each pineapple, bananas, kiwi and strawberries. Sprinkle with coconut. Roll up tortillas.

- Place broth in a medium saucepan, and bring to a boil. Add rice, reduce heat to low, and simmer, covered, for 40-45 minutes, or until tender. Drain excess liquid, cover and let cool.
- Whisk together lemon juice, lime juice, and oil in a small bowl. Season with salt and pepper.
- Place cooled rice in a salad bowl, along with kiwi, red grapes and walnuts. Add favorite dressing, and gently toss.
